Happy Labor Day, everyone!!

Our family started our morning with a treat – my famous Banana Chocolate Chip Waffles.

If you’re interested in making beautiful and delicious waffles like these follow the steps below:

First things first – do you guys have this waffle iron? My dad and I found it a few years ago. Its a 5-in-1 Panini Maker that has a waffle iron attachment. The great thing about it is that the attachments come off so you can run them through the dishwasher!! It’s absolutely amazing!!

First thing’s first, gather all your ingredients.

Preheat your waffle iron. The green light will come one when it’s ready.

Use a potato masher and a tall rimmed plate to mash your banana.

Put your ingredients in a mixing bowl and stir to combine. Pour them over the waffle iron and then add the chocolate chips on top. Close the lid and cook the waffle for 4-6 minutes. Plate your creation, top it and enjoy!

Ingredients
  1. 1 1/2 cup Aunt Jemima's Pancake Mix
  2. -3/4 cup water
  3. 1/2 banana
  4. 1/4 cup chocolate chips
  5. -1 tsp oil
Instructions
  1. Preheat waffle iron to medium heat (350 F).
  2. Use tall rimmed plate to mash your 1/2 banana until all the chunks are gone.
  3. Combine pancake mix, water, banana, and oil in mixing bowl. Stir until combined.
  4. Once Preheated, pour the mixture on the waffle iron and use a spatula to even it out across the waffle iron. Add the chocolate chips on top.
  5. Cook the waffle for 4-6 minutes or until GBD (golden-brown & delicious).
  6. Carefully open the lid of the waffle iron and remove your waffle.
  7. Plate it and garnish how you like.
  8. Serve warm (and with coffee)

The year was 2016. The month, a beautiful sunshiny May in central Massachusetts. Your girl, here, had just graduated from college (finally) and started her dream job as a Mechanical Engineer at a Biomedical company in her hometown. She was living at home with her parents who she missed so much while she was away at school, commuting 1.3 miles to work, and eating completely for free at home. It was the life.

But then, something started happening. The excitement of her new job was starting to wear off and she started getting the 10AM blues. You know the one. The one where you need a certain something. You need that afternoon pick-me-up. YOU NEED COFFEE.

Luckily for her, there was both a Starbucks and a Dunkin Donuts within walking distance of her wonderful working establishment. So she grabbed a friend and they walked to get their caffeine fix. As a born and bred Masshole, there was no way she would pass up Dunks for Starbs, that would just be wrong. So she opted for the better (and cheaper) choice and headed out.

Knowing that she has had stomach problems in the past and that stress ulcers were a definite possibility for someone as Type-A as she, she decided to order a Reduced Fat Blueberry Muffin with her coffee. Her total came out to $4.02, she paid the nice man in the ugly brown apron, and headed back to work. She sat in her cubicle enjoying her treats and continued working.

As the summer drew on, her trips to to Dunks became more frequent. What started as a once a week treat turned into an every day necessity. Some days, she would just get the coffee, some days a muffin as well, and some days a bagel instead.

As the responsible girl she was, she tracked her spending meticulously. She had just finished her Engineering Economy class and knew exactly how much she needed to be saving to afford the house she wanted to buy, or the car that she knew she would need eventually, or just to increase her “in case of emergency” savings account. But there she was spending $30 per week at Dunkin Donuts. For coffee – something she could easily make at home.

She knew she had a problem. She knew she needed to make a change. So that’s what she did. She made one of the most important purchases of her life and invested in a Coffee Press.

This coffee press was amazing. She could make Hot or Iced Coffee. Warm or Cold Brew. Her days of spending an excessive amount of Dunkin Donuts were over, and she can finally rest easily enjoying her Iced Coffee from home.
