This has been happening to me more and more now that I’ve moved into my own home and have to feed myself.

That’s why I created this Meal Planning and Grocery List Printable so that I would know what I was having for dinner every night of the week and what I would need to buy at the store to make it!!

 

Crockpot Chicken and Dumplings

Well here we are you guys, its Sunday again. And you know what that means: work and school tomorrow. There’s only one way to get over the “Tomorrow is Monday Blues” and that is a delicious recipe, like my Crockpot Chicken and Dumplings.

The week is just so stressful. I like to plan out and organize everything on Sunday so my life is like a well-oiled machine during the week.

Priority #1 being meal planning and prepping for the week.

I love crockpot meals. They’re so easy. You can prep everything on Sunday, freeze it and then just toss it in the pot the day you want to have it.

Talk about efficiency!

This week, I made this Crockpot Chicken and Dumpling meal and had my family rate it so I knew if they would want me to make it again.

Crockpot Chicken and Dumplings

Ingredients
  1. - 4 thawed, boneless, skinless chicken breasts, diced
  2. - 1 box of chicken broth [14.5 oz]
  3. - 2 cans of Campbell's Cream of Chicken Soup [10 oz each]
  4. - 1 can Pillsbury Grands Biscuits
  5. - 1/2 white onion, chopped
  6. - 1/8 tsp garlic powder
  7. - salt and pepper to taste
Instructions
  1. Add chicken, chopped onion, garlic powder, salt, and pepper to a freezer-safe gallon bag.
  2. Add contents of bag to the crockpot along with the broth and cream of chicken soup.
  3. Cook on High for 3 hours or low for 6 hours
  4. Unpack biscuits from package and cut into equally sized pieces
  5. Add biscuits to crockpot, stir in, and re-cover .
  6. Cook on high for one more hour.
  7. Once done, serve and enjoy!!

To celebrate the first day of fall this past Thursday, the man and I made some Cinnamon Apple Oatmeal Muffins!!

They were delightful and my whole family loved them, but in an attempt to save ourselves from the calories, I took about twenty five of them to work and left them in the break room.

I even left a Rate This Recipe Worksheet [coming soon] so that my coworkers could rate and leave comments on the muffins and frosting so I could improve the recipe next time.

Unfortunately, I wan’t able to improve the recipe because everyone loved them!!

Anyway, back to the creation of these historic muffins…

It all started with a trip to the Dollar Store. I picked up some festive purple cupcake liners with cute little jack-o-lanterns on them. I also found some adorable serving trays. [I also got some decorations for my cubicle if you haven’t seen that on my Instagram]

Ingredients
  1. 2 cups all purpose flour
  2. 1 cup old fashioned oats
  3. 2 1 cup apple sauce
  4. tsp cinnamon
  5. 1/4 tsp salt
  6. 2 tsp baking powder
  7. 1 cup sugar
  8. 3/4 up vegetable oil
  9. 2 eggs
  10. 1/2 cup plain Greek yogurt
  11. 1/2 tsp vanilla extract
Instructions
  1. Preheat oven to 350 F and place muffin liners in cupcake tray.
  2. In a (very) large bowl, hand mix the dry ingredients (flour, sugar, oats, cinnamon, salt, and baking powder).
  3. In a smaller bowl, mix the wet ingredients (oil, eggs, yogurt, applesauce, and vanilla extract).
  4. Add the wet ingredients to the dry ingredients and mix to combine.
  5. Scoop about a 1/2 cup of batter into each liner. Once a full tray is ready, place it in the oven for 15 minutes.

 Once your muffins are cooled, pipe some of this perfect Cream Cheese Icing onto them.

Cream Cheese Icing soft enough to pipe or thick enough to spread. Perfect for almost any dessert

Ingredients
  1. 1 (8 oz) package of cream cheese (1/3 fat)
  2. 1/2 stick butter, softened but NOT MELTED
  3. 1 1/2 cup buttered sugar, sifted
  4. 1 tsp vanilla extract
Instructions
  1. In a medium bowl, combine the cream cheese and butter with a hand mixer.
  2. once a creamy consistency, add the vanilla and 1/4 cup of powdered sugar, while mixing.
  3. Add the rest of the powdered sugar, 1/4 cup at a time.
  4. Try not to over-mix as the consistency will be bad for piping.

Ingredients
  1. 3 chicken breasts, diced
  2. 1 cup onion, chopped
  3. 2 large carrots, peeled and chopped
  4. 2 medium Macintosh apples, chopped
  5. 3 cloves garlic, minced
  6. 1 cup frozen cranberries
  7. 3/4 cup white rice
  8. 1 tsp paprika
  9. 1 tsp grated ginger
  10. pepper to taste
  11. 1 1/2 cup chicken broth
Instructions
  1. Thaw and dice chicken
  2. Add all ingredients (excluding broth) to a large ziplock bag
  3. Freeze desired length of time
  4. 24 hours before dinnertime, take this bag out of the freezer and place in the fridge
  5. Dump contents of bag and chicken broth into crockpot, cover, and cook (3 hours on low, 6 hours on high)
  6. Serve and enjoy!!

Banana Chocolate Chip Waffles

Happy Labor Day, everyone!!

Our family started our morning with a treat – my famous Banana Chocolate Chip Waffles.

If you’re interested in making beautiful and delicious waffles like these follow the steps below:

First things first – do you guys have this waffle iron? My dad and I found it a few years ago. Its a 5-in-1 Panini Maker that has a waffle iron attachment. The great thing about it is that the attachments come off so you can run them through the dishwasher!! It’s absolutely amazing!!

First thing’s first, gather all your ingredients.

Preheat your waffle iron. The green light will come one when it’s ready.

Use a potato masher and a tall rimmed plate to mash your banana.

Put your ingredients in a mixing bowl and stir to combine. Pour them over the waffle iron and then add the chocolate chips on top. Close the lid and cook the waffle for 4-6 minutes. Plate your creation, top it and enjoy!

Ingredients
  1. 1 1/2 cup Aunt Jemima's Pancake Mix
  2. -3/4 cup water
  3. 1/2 banana
  4. 1/4 cup chocolate chips
  5. -1 tsp oil
Instructions
  1. Preheat waffle iron to medium heat (350 F).
  2. Use tall rimmed plate to mash your 1/2 banana until all the chunks are gone.
  3. Combine pancake mix, water, banana, and oil in mixing bowl. Stir until combined.
  4. Once Preheated, pour the mixture on the waffle iron and use a spatula to even it out across the waffle iron. Add the chocolate chips on top.
  5. Cook the waffle for 4-6 minutes or until GBD (golden-brown & delicious).
  6. Carefully open the lid of the waffle iron and remove your waffle.
  7. Plate it and garnish how you like.
  8. Serve warm (and with coffee)
